About the Course

A two-day advanced course conducted by sushi master Hirotoshi Ogawa (小川 洋利). By the end of the course, student is expected to significantly imporve his / her knowledge in authentic Japanese sushi preparation.

Day 1: 6-7 hours in-person training about the knowledge of sushi, rice, fish, knife, hygiene. etc, conducted by the Ogawa San.

Day 2: 5 hours of technical handson workshop with Ogawa San, followed by an one-hour exam. Upon successfully passing the exam, student will be awarded the Certificate of Completition of the WSSI training.

About Hirotoshi Ogawa

Hirotoshi Ogawa is a renowned Sushi Masterchef, Director General of the World Sushi Skills Institute (WSSI), and Director of the All Japan Sushi Association. He is also a Japanese Cuisine Global goodwill ambassador, representing the Japanese government. With decades of experience, Ogawa's expertise in sushi preparation and presentation has earned him international acclaim. About World Sushi Skill Institute WSSI

The Ministry of Health, Labor and Welfare-approved All Japan Federation of Sushi Business and Life Hygiene Trade Associations has launched the Sushi Knowledge Overseas Certification System as a qualification for sushi cooking hygiene instructors for people working in sushi restaurants in Japan and overseas. Based on the resolution of the General Assembly of the All Japan Sushi Federation, this project is carried out by the International Sushi Knowledge Certification Association.
